It's not often that we release natural processed coffees because we tend to favor the clean and crisp flavors that stem from the washed process. However, when we come across a coffee like Rophi we can’t resist. Rophi is from the Sidama region of Ethiopia, where the rich soil lends unique nutrients and deep color to the coffee grown here.
Small farmers harvest their coffee and bring it to the Rophi mill where hundreds of skillful workers continue to sort out overripe and underripe cherries. The coffee remains on the raised beds for 8-10 days, and rotated every 30 minutes to promote even drying. Time spent on the raised beds is complemented by 2-3 days of final drying on a concrete patio. This careful attention to detail during natural processing ensures each bean carries distinctively clear flavors and vivacious aromatics.
