Juan Felipe Restrepo, Colombia
The Brilliant Juan Felipe is an agronomist, a Q grader, and fanatic manger of The Restrepo family farm, in the department of Caldas Colombia. Tropical rainforest conditions, volcanic soil and a wealth of rivers and streams make the area ideal for coffee growing. After selective handpicking and visual sorting, Juan Felipe lightly ferments cherry for 8 to 48 hours. Then, cherry is laid in thin layers in solar driers for approximately 5 days. Drying cherry is raked frequently to ensure even drying. Then, drying is finished in a vertical mechanical dryer where the temperature is carefully monitored to ensure it stays before 45 degrees Celsius.
