Las Mercedes, El Salvador
This coffee comes from a producer who we have worked with for a number of years. Lucia Ortiz and her family have produced Cup of Excellence winning coffees in the Cerro El Tigre region of El Salvador and continue to be pioneers in farming and processing.
This lot has gone through a double washed process on the farm, meaning that it was fermented for 12 hours in a pool of water. Then, the water was dumped and replaced with clean water for an additional 12 hours. This process prolongs fermentation and produces more bright and crisp flavors.
