Each year we work with the Ortiz family to purchase delicious coffees from some of the best in El Salvador. Each year we purchase a few lots and the honey processed pacamara is always a favorite. The honey process is kind of like a mixture between a washed and natural process. The coffee cherry is removed with water but the mucilage under is left to dry off.
