Wilton Benitez Pink Bourbon, Colombia

This coffee is sparkling and wild. It is our second release from Wilton Benitez this year. The ripe cherries are sorted then undergo a fermentation where they are deprived of oxygen. A specific yeast is then added to produce the wild and citrus flavors.
