Inspired by his father, Álvaro Acevedo, Fabian delved into the world of coffee quality, beginning with fermentation processes that gradually improved their final product. Their journey toward excellence started in 2006, focusing on clean cups, and progressed significantly with fermentation techniques introduced in 2013. By 2018, they achieved remarkable flavors. However, ongoing efforts are needed to navigate climate change's impact on coffee cultivation, ensuring their commitment to quality endures despite environmental challenges. Fabian's story reflects resilience, innovation, and a dedication to producing exceptional coffee that honors his family's legacy and sustains their future inherited.
